Lightly season and grill your chicken breast. I typically make a big pack of chicken and grill it on a Sunday so I have my chicken already prepared and ready to toss on my salad every afternoon for lunch
I also make the lemon poppy seed salad dressing ahead of time: In a small bowl, whisk together the olive oil, lemon juice, honey, mustard, poppy seeds, and salt
Each day when I’m ready to put my salad together I add the greens, blueberries, avocado, almonds or pepitas, and feta to a plate. Slice the grilled chicken and place on top of the salads. and drizzle with the lemon poppy seed dressing.
