Keto No-Bake Pecan Brownie Bites

I love that these are no-bake so it will take five minutes to blend all the ingredients, roll them into little bites, stick them in the freezer for 20 minutes and then you have yourself the best Keto brownie bites ever!

How to make No-Bake Keto Brownie Bites
Add the chopped pecans, salt, cocoa powder, almond butter, vanilla, Lakanto monk fruit sweetener, and process until everything is well combined.
Within a few seconds, a thick brownie batter should form. Scrap the keto brownie batter into a medium bowl and fold in the chocolate chips.
You could probably just prevent extra dirty dishes and do this step in the processor, but I’m messy and would have dumped half the batter on to the counter if I attempted that lol
Now portion the batter into 12 even balls and place them on a parchment paper-lined baking sheet.
I used a restaurant-style butter scoop to scoop my brownie bites, which was the perfect size.
Place the baking sheet in the freezer and in about 20 minutes you’ll be able to enjoy the perfect no-bake keto brownie bites.
I prefer to keep mine stored in the freezer, but you can also store them in the fridge, pack them in lunches and they will still hold together and taste great!
