Keto Crockpot Chicken Cacciatore Stew

The other day I had a super busy day, it randomly hit me that I was starving, which I was kinda annoyed about because the last thing I wanted to do at that moment was make dinner, let alone do anything besides sit down.
But then I had another epiphany, that morning I had spent less than 10 minutes throwing some onions, mushrooms, bell pepper, tomatoes and chicken in the crockpot and to my relief dinner was already ready, waiting for me on the kitchen counter. Hell yes!
I think I’m going to start making more crockpot keto friendly dinners because it seriously makes things so much easier.
Easy to throw together and easy to clean up. Don’t worry I plan to share all of the tasty recipes I come across with you too.

But first, up on the super duper easy crockpot keto diet menu is chicken cacciatore stew. Initially, I wasn’t planning for it to be a stew, but when you cook chicken in a crockpot, it’s so tender the chicken just falls apart, so it seemed more appropriate just to call the recipe a stew.
First, place your chicken thighs in your crockpot and season with salt and pepper. Then pour the 28oz can of tomatoes over the chicken.
If you haven’t already, slice up the onion, bell pepper and mushrooms. Then put them in the crockpot along with the oregano, bay leaf and an additional pinch of salt and pepper.
Give it a quick little stir, cover and set crockpot on low for 8 hours or on high for 4 hours.
The last step is to use two forks to shred the chicken up. It should literally fall apart and be super easy to shred. Then add the fresh basil on top.
Like I said SUPER DUPER EASY right?!
You can either serve the Chicken Cacciatore right away (the whole fam will love it) or store it in the fridge for the perfect meal prep dinner. Just re-heat some in the microwave for about a minute and a half each night.
Crockpot Chicken Cacciatore Stew
Makes 8 Servings • Prep time: 10 Minutes • Cook time: 4-8 Hours
WHAT YOU NEED:
6 Skinless, Boneless Chicken Thighs
28 Ounce Can of Peeled Tomatoes
1/2 Yellow Onion, sliced
1 Bell Pepper (any color), sliced
10 Ounces Mushrooms, sliced
1 Tablespoon Dried Oregano
1 Bay Leaf
1/4 Cup Fresh Basil
HOW TO DO IT:
Add chicken thighs to crockpot and season with salt and pepper
Add tomatoes, mushrooms, onions, bell pepper, oregano and bay leaf
Set crockpot to low for 8 hours or high for 4 hours
Use two forks to shred chicken
Sprinkle with fresh basil before serving
