I’m all about quick and easy meal prep options that you can batch on the weekend and then reheat each morning on your way out the door. Making healthier options convenient is the only way to follow through on your Keto Diet 

HOW TO MAKE JALAPENO EGG CUPS

First, you will need to give the bacon a little head start by par-cooking the bacon. You want it to be just a little crisp but still pliable. You can throw it on a sheet pan and bake for about 8 minutes while you prepare the rest of the ingredients.

In a bowl combine the cream cheese, eggs, deseeded, and chopped jalapenos. You can also slice one of the jalapenos and add to the tops of the egg bites, either way, is fine, garlic powder, onion powder, salt, and pepper and blend until well incorporated.

Now you will place the par-cooked bacon around the edges of each well of the muffin pan.

Then pour the egg mixture evenly into the wells of the muffin tin and top with the shredded cheddar cheese and bake for 20-25 minutes.

SOME TIPS WHEN MAKING BREAKFAST EGG BITES

  • Be sure to grease or line your muffin pan with Primal Kitchen Avocado Oil Spray or silicone liners for easy removal

  • Or you can just use a silicone muffin pan

  • Don’t fill the egg mixture all the way to the top,  fill each muffin cup about 2/3 full

  • If you love how the recipe turns out you can really use the same instructions and just change up your toppings- you could do mushrooms, onions, and bell pepper instead of jalapenos for a different taste.

REHEATING EGG MUFFINS-CAN YOU REHEAT EGGS IN THE MICROWAVE?

Obviously, if you meal prep this recipe you will have to reheat them each morning. When you reheat egg cups in the microwave they can become rubbery which is a sign they are overcooked, the trick is when reheating them not to cook them too long, 30 seconds should do the trick.
